These Cranberry–White Chocolate Bars are soft, lightly sweet, and full of festive flavor. Almond flour creates a tender base, while orange zest, dried cranberries, and white chocolate add brightness and balance. Finished with a creamy frosting and white chocolate drizzle, these bars are perfect for holidays, gatherings, or make-ahead treats. A simple vegan option makes them easy to adapt.

Ingredients

  • 1 ½ cup almond flour

  • ⅓ cup maple syrup

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda

  • ½ cup cashew butter or tahini

  • 1 egg*

  • ½ teaspoon salt

  • Zest of 1 orange

  • ½ cup white chocolate chips

  • ½ cup dried unsweetened cranberries


Ingredients for cream cheese frosting

  • 8 oz block cream cheese*

  • ¾ cup powdered sugar - or substitute powdered monk fruit sweetener

  • ¼ cup dried unsweetened cranberries

  • ¼ cup white chocolate chips*

  • ½ teaspoon coconut oil


*For a vegan version:

  • 1 tablespoon ground flax seeds + 3 tablespoons water = 1 egg

  • 8 oz vegan cream cheese = 8 oz cream cheese from dairy

  • vegan white chocolate chips from oat or rice sources

Preparation

  1. Preheat the oven to 350 degrees fahrenheit. 

  2. Line a 9x9 inch baking dish with parchment paper. 

  3. Combine the almond flour, maple syrup, vanilla extract, baking soda, cashew butter, egg and orange zest in a large bowl. Mix until all ingredients are fully incorporated. Add the white chocolate chips and dried cranberries to this batter until well combined. Place batter into the prepared pan and flatten until evenly across the pan. 

  4. Bake in the preheated oven for about 20 minutes or until golden on top. Take out of the oven to cool and lift the parchment out of the pan, placing on a cooling rack. 

  5. While this is cooling, combine the softened cream cheese and powdered sugar with a mixer until smooth. 

  6. Place the parchment paper with cooled bars on a cutting board and spread the cream cheese frosting across the top. Add additional dried cranberries on top.

  7. Microwave the white chocolate chips and coconut oil for 1.5-2 minutes or until melted. Drizzle on top of the bars. Place this in the refrigerator for about an hour to cool.

  8. Take out and cut in the bar shape desired. Enjoy!
