About the Recipe

Eggs have long been used as a binder for muffins, quick breads and cakes. Even if you prefer to use eggs, it’s always a good idea to know a quick replacement if it’s not available. But for many people, whether vegan, or someone who has a food sensitivity or allergy, it might be imperative to always have one of these on hand. Additionally, there are commercial products available on the market but for the purpose of this document, we will discuss food choices.

1 large egg =


  • ¼ cup unsweetened applesauce

  • ¼ cup mashed banana

  • 1 tablespoon arrowroot powder + 3 tablespoons water 

  • ¼ cup carbonated water 

  • 1 tablespoon ground flaxseeds + 3 tablespoons water  

    • *Let sit for 5 minutes before using in the recipe.

  • 1 tablespoon whole or ground chia seeds + 3 tablespoons water   

    • *Let sit for 5 minutes before using in the recipe.

  • 3 tablespoons aquafaba

  • 2 teaspoons baking powder + 2 tablespoons water + 1 teaspoon avocado oil (or similar neutral flavor oil)
