Fattoush Salad is a classic Middle Eastern dish that celebrates fresh, seasonal ingredients. Crisp vegetables, fragrant herbs, toasted flatbread, and a bright lemon-sumac dressing come together to create a refreshing salad that's bursting with flavor and texture. Whether served as a side dish or enjoyed as a light meal, this colorful recipe is an easy way to add more vegetables and fresh herbs to your plate.

Ingredients
½ cup buttermilk or plain kefir (vegan kefir to make it plant-based)
2 stale pieces of flatbread, torn into bite-size pieces
3 large tomatoes, cut into 2-inch pieces
3 medium radishes, thinly sliced
4 Persian cucumbers, peeled and chopped
2 spring onions, thinly sliced
½ cup fresh mint, coarsely chopped
1 cup flat-leaf parsley, coarsely chopped
2 garlic cloves, finely chopped
3 tablespoons fresh lemon juice
¼ cup extra virgin olive oil
2 tablespoons white wine vinegar
½ teaspoon ground black pepper
½ teaspoon salt
1 tablespoon sumac
Preparation
Tear the flatbread into bite-sized pieces and place them in a large mixing bowl.
Add the tomatoes, cucumbers, radishes, spring onions, mint, parsley, and garlic.
In a small bowl, whisk together the lemon juice, olive oil, white wine vinegar, black pepper, salt, and sumac.
Pour the dressing over the vegetables and toss well to coat.
Stir in the buttermilk or kefir and gently mix everything together.
Let the salad sit for about 10 minutes to allow the flavors to combine and the bread to soften slightly.
Before serving, drizzle with a little extra olive oil and sprinkle with additional sumac, if desired.
