Ingredients
4 ozs Sardines In Tomato Sauce (Reccomend:
Wild Pacific Sardines from Raincoast Trading)
3 handfuls Spring Lettuce
2 ozs Sweet Onion (sliced)
2 tbsps Extra Virgin Olive Oil
1 tbsp Red Wine Vinegar
1/4 tsp Black Pepper (Freshly ground if possible)
1/4 cup Italian Parsley (roughly chopped)
Preparation
Place sardines with sauce in center of large dish.
Spread lettuces around fish.
Arrange sweet onion on top of lettuce.
Sprinkle dish with vinegar and drizzle with olive oil.
Garnish with parsley.
