Satisfy your sweet tooth with these Heart Beet Treats—delicious, nutrient-rich energy bites infused with earthy beets, dates, and cacao. Perfect for a guilt-free treat, these naturally sweetened bites can be enjoyed with or without a decadent chocolate coating.

Ingredients
1 cup walnuts
1 cup rolled oats
2 tablespoons ground flaxseeds
1⁄2 teaspoon cinnamon
1⁄8 teaspoon salt
8 dates, pitted
1⁄2 cup red beet, peeled and grated
1⁄4 cup cacao powder
1⁄2 teaspoon vanilla extract
1-2 tablespoons maple syrup - optional
Chocolate coating
1⁄2 cup dark chocolate chips
1 teaspoon coconut oil
Preparation
Add walnuts, oats, flaxseeds, cinnamon and salt to a food processor and pulse several times to combine. Add the dates, beets, cacao, vanilla and maple syrup (optional) then process continuously until the mix starts clumping together and rolling around in a ball.
Remove the mixture from the food processor and place in a bowl. Use a spoon to get the desired serving size and roll into a ball with your hand. Place each in a dessert cup or tray.
If adding a chocolate coating: Place chocolate chips and coconut oil in a microwave safe bowl. Place in the microwave for 30 seconds at a time, removing between to stir. When chocolate is melted and smooth, use two forks to dip each ball into the chocolate to coat and carefully place back on the plate or tray. When finished, place the plate/tray in the freezer for 5-10 minutes. Then move into a covered container for the refrigerator until ready to serve.
Refrigerate up to a week or freeze for up to 3 months.
