Ingredients

  • 3 cups brown lentils

  • 7 cups water or stock (more as needed)

  • 2 tablespoons olive oil

  • 1 medium onion, chopped

  • 2 stalks celery, chopped

  • 2 large carrots, chopped

  • 2 cloves garlic, minced

  • 2 teaspoons salt

  • black pepper to taste

  • ½ teaspoon thyme

  • ½ teaspoon oregano

  • 2 medium sized ripe tomatoes, chopped

  • 2 tablespoons fresh lemon juice

  • 2 tablespoons maple syrup

  • Red wine vinegar or balsamic vinegar (optional)

  • Parsley, fresh chopped (optional)

Preparation

  1. Heat the oil in a large pot. Add the onion, celery and carrots and saute over medium heat for about 10 minutes. Add the garlic, 1 teaspoon salt, pepper,  herbs and sautee about 5 minutes longer. 

  2. Add the lentils and water to the pot and let simmer for 40-45 minutes. 

  3. Stir in the tomatoes, lemon juice and maple syrup. Taste to correct seasonings, then simmer for at least 30 minutes longer. Serve hot with a little vinegar drizzled into each bowl and a sprinkling of fresh parsley on top.
