This hearty lentil soup is packed with flavor and nutrition, featuring tender lentils, fresh vegetables, and aromatic herbs. A splash of lemon juice and maple syrup adds a bright, subtle sweetness, while optional vinegar and parsley provide a finishing touch. Perfect for a comforting, wholesome meal!
Ingredients
3 cups brown lentils
7 cups water or stock (more as needed)
2 tablespoons olive oil
1 medium onion, chopped
2 stalks celery, chopped
2 large carrots, chopped
2 cloves garlic, minced
2 teaspoons salt
black pepper to taste
½ teaspoon thyme
½ teaspoon oregano
2 medium sized ripe tomatoes, chopped
2 tablespoons fresh lemon juice
2 tablespoons maple syrup
Red wine vinegar or balsamic vinegar (optional)
Parsley, fresh chopped (optional)
Preparation
Heat the oil in a large pot. Add the onion, celery and carrots and saute over medium heat for about 10 minutes. Add the garlic, 1 teaspoon salt, pepper, herbs and sautee about 5 minutes longer.Â
Add the lentils and water to the pot and let simmer for 40-45 minutes.Â
Stir in the tomatoes, lemon juice and maple syrup. Taste to correct seasonings, then simmer for at least 30 minutes longer. Serve hot with a little vinegar drizzled into each bowl and a sprinkling of fresh parsley on top.
