About the Recipe

This grain-free granola is a crunchy, satisfying alternative to traditional granolas. Packed with healthy fats, plant-based protein, and a touch of natural sweetness, it’s great with fruit, on yogurt, or by the handful. Plus, it's gluten-free and refined sugar-free!

Ingredients

  • 1 ½ cups walnuts

  • 1 ½ cups pecans

  • 1 cup coconut flakes

  • ½ cup pumpkin seeds

  • ½ cup sunflower seeds

  • ¼ cup maple syrup

  • 1 tablespoon coconut oil

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla extract

  • ½ teaspoon sea salt

Preparation

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.

  2. In a large bowl, mix walnuts, pecans, coconut flakes, pumpkin seeds, sunflower seeds, cinnamon, and sea salt.

  3. In a small saucepan, heat the coconut oil and maple syrup over low heat. Let simmer 2–3 minutes. Remove from heat and stir in vanilla.

  4. Pour the warm mixture over the dry ingredients and stir well to combine.

  5. Spread onto the prepared baking sheet and bake for 25–30 minutes or until golden, stirring once halfway through. Be careful not to overbake.

  6. Let cool completely, then store in an airtight container.
