About the Recipe
This Carrot Cinnamon Smoothie is rich in fiber and flavor, combining sweet root veggies, warming spices, and protein for a satisfying and nutritious drink. Perfect for batch prep and busy mornings!

Ingredients
3 medium carrots, cut into 1⁄2 inch slices
2 medium bananas, cut into 1 inch slices
1 medium sweet potato, cubed and boiled
4 pitted dates
1 teaspoon cinnamon
1⁄2 teaspoon nutmeg
3⁄4 cup walnut halves or pieces
Add later:
1⁄2 block silken tofu or favorite protein powder
4 cups plant based milk of choice
Preparation
Divide the first 7 ingredients into 4 freezer safe containers or 2 containers if making a double serving. Seal and place in the freezer until ready to use. Recommend label with the name of smoothie and date.
When ready to prepare, empty the contents of one container into a blender, add tofu or protein powder and 1 cup of milk per serving. Blend on high for 2 minutes or until creamy and smooth.
Pour into glass and enjoy.
Ahead of time note: Ingredients can last in freezer up to 3 months.
