Ingredients

  • 2 cups fresh ginger, washed and cut into ½-inch pieces, do not peel

  • 4 cups water

  • 2 tablespoons lemon juice

  • ¼ cup honey or maple syrup

Preparation

  1. Place the ginger slices and water in a large pan.

  2. Bring to a boil, then lower the heat and simmer for 45–60 minutes.

  3. Strain off the ginger root and add maple syrup or honey, if desired, and lemon juice.

  4. Place in a glass jar and refrigerate for up to two weeks.


Storage: Store in a sealed glass jar in the refrigerator for up to two weeks.
