This simple ginger syrup is a soothing, flavorful addition to teas, sparkling water, mocktails, smoothies, or warm lemon water. Made with fresh ginger, lemon juice, and a touch of honey or maple syrup, it’s an easy make-ahead staple to keep in the refrigerator.

Ingredients
2 cups fresh ginger, washed and cut into ½-inch pieces, do not peel
4 cups water
2 tablespoons lemon juice
¼ cup honey or maple syrup
Preparation
Place the ginger slices and water in a large pan.
Bring to a boil, then lower the heat and simmer for 45–60 minutes.
Strain off the ginger root and add maple syrup or honey, if desired, and lemon juice.
Place in a glass jar and refrigerate for up to two weeks.
Storage: Store in a sealed glass jar in the refrigerator for up to two weeks.
Serving Ideas: Add to hot tea, sparkling water, smoothies, mocktails, or warm lemon water.
