This toasted barley porridge is a simple, nourishing base that can be enjoyed both sweet or savory. With its mild flavor and chewy texture, barley pairs well with a variety of toppings, making it an easy way to build balanced meals that fit your preferences and needs.

Ingredients

1 cup pearled barley
3 cups water
⅛ teaspoon salt
Toppings
Sweet options:
Berries
Walnuts (or nut of choice)
Flaxseeds, pumpkin seeds or other seed of choice
Honey or maple syrup
Cinnamon, cardamom or nutmeg
Milk of choice
Savory options:
Toasted almonds
Arugula or spinach
Broccoli sprouts
Avocado
Feta or goat cheese
Olive oil
Pickled vegetables
Miso or tahini sauce
Preparation
Wash barley in water. Heat a large pot and place the barley in the pot to toast over a medium heat. Stir and watch closely. This will take 10-15 minutes.
Bring to a boil then reduce to a simmer stirring occasionally.
Cover and let it continue to cook for 45-50 minutes. Barley will be soft but still slightly chewy.
Add toppings of choice and enjoy.
NOTE: This will make approximately 4 servings which may mean leftovers. Barley will last for 3 days in the refrigerator or freeze for up to 3 months.
