Ingredients


Whole Barley


  • 1 cup pearled barley

  • 3 cups water

  • ⅛ teaspoon salt


Toppings

Sweet options:

  • Berries

  • Walnuts (or nut of choice)

  • Flaxseeds, pumpkin seeds or other seed of choice

  • Honey or maple syrup

  • Cinnamon, cardamom or nutmeg

  • Milk of choice


Savory options:

  • Toasted almonds

  • Arugula or spinach

  • Broccoli sprouts

  • Avocado

  • Feta or goat cheese

  • Olive oil

  • Pickled vegetables

  • Miso or tahini sauce

Preparation

  1. Wash barley in water. Heat a large pot and place the barley in the pot to toast over a medium heat. Stir and watch closely. This will take 10-15 minutes.

  2. Bring to a boil then reduce to a simmer stirring occasionally.

  3. Cover and let it continue to cook for 45-50 minutes. Barley will be soft but still slightly chewy.

  4. Add toppings of choice and enjoy. 


    NOTE: This will make approximately 4 servings which may mean leftovers. Barley will last for 3 days in the refrigerator or freeze for up to 3 months.
